What's Up Wednesday | October
It is the last Wednesday of the month which means I will be linking up with Shay, Shaeffer and Mel for October's installment of What's Up Wednesday :). Grab a cup of coffee and settle in, this post is a doozy!
1. What we’re eating
this week…
First, I am going to show you what we ate last week, because
it is far tastier (but much less healthy) than what we will be eating this
week. Last week, we headed to College
Station, where the first thing that we did when we got into town was pick up an
iced Mugwall. Oh my goodness, if you live in College Station or just go through
College Station- go to Mugwall’s immediately and order this drink. Four shots of espresso, milk, white
chocolate, dark chocolate and milk chocolate all shaken together for the most
delicious creation.
After walking around campus, we went to Blue Baker that
night for dinner where we shared a brick oven pizza.
The next morning, we stopped at Mugwall’s again before
heading out and while the hot Mugwall was more beautiful than the iced Mugwall-
Wes and I both decided that the iced Mugwall remained supreme.
The next day, we drove to Austin to hit up mine and Wes’s
all-time favorite hamburger spot- Shake Shack. And oh my goodness, it was just
as delicious as both of us remembered (we ate it twice in New York and I got to
eat there once in Dubai).
And a quick trip to Austin would not be complete without
stopping by Sandy’s for their frozen yogurt/custard :).
Now this week, we are trying to take a healthier approach compared to
our vacation days; last night (Monday) we had chicken tortilla soup, tonight (Tuesday) we are having taco soup and I am thinking about seeing if Wes wants to make this faux quiche on Wednesday night.
2. What I’m reminiscing
about…
The night that Wes and I got engaged right here under the Century tree! As mentioned above, we had the chance to take the girls to College Station this week and it is always a must see for us on any trip to C.S. I love attempting to explain to the girls what happened here; meanwhile they have dazed and confused looks on their faces not getting the concept of engagement at all ;).
3. What I’m loving…
Watching my girls come into their own and develop their personalities
while exploring the world around them.
Wes and I put a lot of emphasis in giving the girls different kinds of
experiences and it is fun to just watch them be them.
4. What we’ve been up
to…
We just had the wettest, rainiest weekend that we have had since May; but we didn't let that dampen our spirits- this past weekend was the weekend of celebrations and activities. After our trip to College Station and Austin, we went to Boo at the Zoo, Nicholas and
Noah’s birthday party, visited with my parents and wrapped up the weekend celebrating Ally’s birthday.
5. What I’m dreading…
My annual skin check this month. Ever since my mole drama, I see a dermatologist once a year to get a full body scan/checkup and I drive myself crazy with the nervous anticipation.
6. What I’m working on…
Patience for my threenager :). Seriously though, it takes lots and lots and lots-more-than-you-think-you-have patience for my three year old some days. There have been a few days where we spend the whole day in meltdown mode. I am thinking these are just growing pains (and thanking my lucky stars that the good days outweigh the bad days) and looking forward to the so-called golden years which should be just right around the corner.
7. What I’m excited
about…
Going to the Dallas Arboretum with my family this coming month. Due to soccer and schedule conflicts, we were
not able to go in October so I am really excited to take them there in
November. As a fun walk down memory lane, here are some pictures from the past few years.

8. What I’m
watching/reading…
Still watching the same 4 shows as last month. And I just feel the need to share that Monday's episode of the Big Bang Theory might have been my favorite episode to date- the jokes were spot on and my belly seriously hurt from laughing so hard when it was over.
I did put this book on my Christmas list; so maybe, just maybe- in January, I can show you that I do in fact know how to read a book.
9. What I’m listening to…
Taylor Swift and KRLD so moving right along...
10. What I’m wearing…
I once again remembered to take pictures of what I have been
wearing! Here are two of my favorite outfits lately, happened to be worn on the
same day! This was my first time to try booties with a dress and I would say the verdict is still out for me as to what I think about this combination :).
I am so used to taking pictures of my kiddos, that posing for Wes to take a couple of snapshots of me is way harder than I ever thought- major kudos to the fashion bloggers that I read.
And because on most days, my toddler dresses better than me :).
Later that night, I pulled out some new jeans, a plaid flannel and a striped sweater. Looking at these pictures, I shouldn't have sized up on the sweater- hopefully it will shrink up a bit in the dryer.
And last, but not least- Ev's and I were twining in my favorite Whistle and Flute clothing at Emma's soccer practice on Monday.
And because on most days, my toddler dresses better than me :).

11. What I’m doing this
weekend…
Oooohhhh, it should be a fun weekend (especially if it
doesn’t rain). On Saturday, we have Emma’s soccer game in the morning and our
church’s fall festival in the afternoon (picture below is from last year's fall festival).
On Sunday, we are hoping to take the girls over to visit with their Aunt Celeste followed by an afternoon of babysitting our favorite baby Seodore.
12. What I’m looking
forward to next month…
Going to Port Aransas for Thanksgiving. It is one of my most favorite family traditions
and I am excited to take the girls for their 3rd and 4th
times. I am just hoping they are less clingy than last year ;).
13. What else is new…
I feel the need to tell you that Wes has really turned our girls into fabulous sleepers. I can remember the first year (and possibly two years) of Everly's wife, Wes would drive the girls around in order to get the girls to take a nap at the same time. At some point last spring, he started getting them to both nap in our bed on the weekdays and then on the weekends each one of us would take one of the girls and nap with them. They consistently rock 2 - 2.5 hour naps and this is AWESOME! For everyone involved :).
Also, while we were in College Station, Emma wanted us to 'do a cheer together' and when we asked her what she meant by this, she proceeded to show us and we did a little family cheer right there in front of Kyle Field.
14. What’s your favorite
Thanksgiving Recipe…
No questions about it, pumpkin crunch *I think this is a picture of Emma eating some of it last year, but really it could be pie, so who knows?*. If you are looking for a stellar dessert, this one will not disappoint.

(15 oz) can pumpkin
1
cup evaporated milk
1
cup sugar
1
teaspoon vanilla extract
1/2
teaspoon ground cinnamon
1
package butter-flavored yellow cake mix
1
cup chopped pecans
1
cup butter, melted
Stir
together first 5 ingredients. Pour into a lightly greased 13X9 inch baking
dish. Sprinkle cake mix evenly over pumpkin mixture; sprinkle evenly with
pecans. Drizzle butter evenly over pecans.
Bake
at 350 degrees for 1 hour to 1 hour and 5 minutes or until golden brown.
Remove from oven, and let stand 10 minutes before serving. serve
warm or at room temperature.
